Uneven Baking and Oven Door Gasket Problems

Some unevenness is normal in any oven, especially with dark pans or crowded racks. Large differences, burned bottoms or heat pouring out of the door point to a part that needs attention.

What usually causes it

  • Door gasket. A torn, flattened or missing gasket lets heat escape at the top of the door.
  • Door hinges. Bent or worn hinges keep the door from closing flat.
  • Convection fan or element. A convection fan that does not run, or a failed convection element, makes uneven results in convection modes.
  • Bake element. A partly failed element heats only part of the oven.
  • Temperature sensor. A sensor touching the oven wall, or out of calibration, misreads temperature.
  • Rack and pan choices. Dark pans brown faster. Multiple pans block airflow.

Oven baking unevenly

Uneven results can come from a weak element, a convection fan problem, a leaking door gasket, or an oven out of calibration.

Check first: Test with an oven thermometer in the center and avoid covering racks with foil.

Oven door or gasket problem

A sagging door or torn gasket lets heat out, which slows preheating and causes uneven baking.

Check first: Look for gaps or burned spots around the door seal.

Safe checks you can do

  • Check the gasket all the way around for gaps or tears.
  • Close the door on a strip of paper at several points; it should hold.
  • In convection mode, look and listen for the fan.
  • Bake with a single pan on the middle rack to compare.
  • Use an oven thermometer to check the actual temperature.

Parts that fail most often

  • Door gaskets wear around the top corners.
  • Hinges bend when people lean on an open door.
  • Convection fan motors fail on heavily used ovens.

How your home affects it

In older homes

Older homes in the Houston area often have smaller kitchens and laundry closets built for smaller appliances, older wiring, and shut-off valves that have not been turned in years. Older ranges and gas lines deserve a careful check, and some older kitchens share a circuit between appliances.

In new construction

Newer homes in the Houston area usually come with builder-grade appliances, and many early problems are installation issues rather than failed parts. A missing anti-tip bracket or a gas range that was never converted correctly can cause problems from day one.

In apartments and condos

In apartments, condos and townhomes around the Houston area, space is tight and the building often has its own rules for access, parking and shut-off valves. Compact and slide-in ranges are common, often on a single small circuit.

In garages

Plenty of homes in the Houston area keep a second fridge, a freezer or the laundry in the garage, where summer heat regularly passes 100°F. Outdoor and garage cooking setups see more heat, dust and humidity than kitchen ranges.

During storm season

Storm season around the Houston area brings power outages, surges and sometimes flooding, and appliances often show problems right after the lights come back on. Surges can damage oven controls and igniters. If a gas appliance was underwater, do not use it until it is inspected.

When to call for repair

  • Heat escapes from the door.
  • The door will not close flat.
  • The convection fan does not run.

If you smell gas, do not light anything or flip switches. Leave the house and call the gas utility from outside.
